Mashed Carrots and Parsnips Recipes

Ingredients :



1 teaspoon

large carrots

large parsnips


freshly ground black pepper

Method :
  1. Peel the carrots and parsnips and chop them into large chunks.

  2. Place the pieces in a large saucepan and add 2-inches of cold water.

  3. Add salt and a few grindings of black pepper.

  4. Place over medium heat, cover, and leave to simmer for 15 minutes, or until vegetables are tender.

  5. Mash with a fork or hand-held potato masher until coarsely combined.

  6. Add more salt and pepper if needed and serve.

Serves 4
