Penne Primavera Recipe

Serves Eight

Ingredients :

2 cups red, green or yellow pepper strips

1 cup sliced zucchini or yellow squash

1 cup julienne carrot strips

1/2 cup sliced onion

2 teaspoon Italian seasoning

2 cloves garlic, crushed

1/4 teaspoon ground black pepper

2 tablespoon margarine

1 cup coarsely chopped tomato

1 pound penne pasta, cooked and drained

1 cup Egg Beaters

1/4 cup grated parmesan cheese

Method :

  1. In skillet over medium heat, cook and stir peppers, zucchini, carrots, onion, Italian seasoning, garlic and pepper in margarine for 3 minutes
  2. Add tomato; cook for 1 more minute until vegetables are tender/ crisp.
  3. Toss with hot pasta, egg product and cheese
  4. Serve immediately
