Scalloped Potatoes with Onions Recipes

Ingredients :

1kg potatoes, thinly sliced

1 large onion, thinly sliced

Method :
  1. Peel parsnips thinly, cut them into large matchsticks.
  2. Place the butter, lemon juice, pepper and stock into a frying pan.
  3. Bring to the boil.
  4. Add the parsnips and herbs.
  5. Cook, uncovered, until the stock has reduced and the parsnips are tender.
  6. Add more stock if necessary.
  7. Garnish with thyme.

Serves 4
