Spiced Beans Recipes

Ingredients :

225 g

Garnish :

15 ml

dried red kidney beans, soaked and drained

canned tomatoes

large onion, chopped

clove garlic, crushed

cayenne pepper



chopped parsley

Method :
  1. Cook the beans in boiling, unsalted water for about 1 hour, or until nearly tender.

  2. Drain.

  3. Boil the tomatoes, onion and garlic, cayenne pepper and a little salt for 5 minutes to reduce the liquid slightly.

  4. Add the drained beans, cover and simmer for 15 minutes.

  5. Turn into a heated serving dish and garnish with the parsley.

Serving Suggestion :

Spiced beans can be served as a high fiber sauce with brown rice or as a vegetable accompaniment to flans and cold meat.

Alternative Suggestion :

Other dried beans can be served in the same way - haricot beans, chick peas or butter beans.
