Stuffed Ladies Fingers Recipes

ladies' fingers, cleaned and slit on one side

mackerel, minced

thick coconut milk

thin coconut milk

fresh red chilies

dried chilies

lemon grass

piece galangal

candlenuts

cloves garlic

shallots

oil

thumb size piece shrimp paste

Method :
  1. Stuff the minced fish into the ladies' fingers.
  2. Arrange on a plate and pour 11/2 tablespoons oil over them.
  3. Steam until half cooked and remove.
  4. Heat oil and fry the ground ingredients until golden and fragrant.
  5. Add 2 tablespoons thick coconut milk and stir.
  6. When oil separates, pour in the thin coconut milk and bring to boil.
  7. Pour in the remaining thick coconut milk and the ladies' fingers.
  8. Bring to the boil, add salt and remove.

Serves 4 - 6
