Winter Melon and Carrot Balls Recipes

Ingredients :

38g conpoy

600g winter melon

1/2 carrot

1 cup stock or water

1 slice ginger

1 tomato

Steaming for conpoy

1 slice ginger

1 tsp oil

1/3 cup water for conpoy

Sauce

1/4 tsp salt

1/5 tsp sugar

3/4 tsp caltrop starch

4 tbsp steaming sauce from conpoy

Method :

Wash conpoy and soak for 2 hours (water level should be sufficient to cover conpoy). Tear away hard tissue. Add steaming ingredients. Steam for 2 hours. Set aside steaming sauce. Peel and clean winter melon. Mould into ball shapes. Remove some flesh from center. Scoop carrot into ball shapes. Steam with stock or water and 1 ginger slice for 20 minutes. Stuff conpoy into winter melon balls. Steam for 5 minutes more. Heat wok. Add oil. Bring sauce to the boil. Pour over balls. Garnish with carrot and tomato. Serve.
