Chicken Hot Pot Recipes

Ingredients :

chicken thigh meat, boned and cut into small bite sized pieces


each lime juice and fish sauce

vegetable oil

cloves garlic, sliced and 2 shallots, chopped

dried small red chilies

crushed yellow bean sauce

chicken stock

spring onions, cut into short sections

coriander sprigs, to garnish

salt and freshly ground black pepper

Method :

Marinade chicken with salt, pepper, sugar, lime juice and fish sauce for 1-2 hours. Heat oil in a clay pot or flameproof casserole and stir fry garlic, shallots and chilies for about 1 minute, then add yellow bean sauce and stir until smooth. Add chicken pieces and stir fry for 1-2 minutes. Add chicken stock, blend well and bring to the boil, then reduce heat, cover and simmer gently for 15-20 minutes. Uncover and stir in spring onions. Garnish with coriander sprigs and serve straight from the pot. Serve with rice.

Serves 4

Variation  - The longer chicken is marinated, the better the flavor, so try to leave it for 2 hours.
