Courgettes With Ginger Recipes

Ingredients :

2 tablespoons

1 teaspoon

450 g


2-3 tablespoons

55 g



1/2 teaspoon

1 tablespoon

vegetable oil

minced garlic

courgettes, peeled and cut into small wedges

small carrot, sliced

stock or water

straw mushrooms, halved lengthways

tomato sliced

spring onions, cut into short lengths


fish sauce

small piece fresh root ginger, peeled and sliced

salt and freshly ground pepper

Method :
  1. Heat oil in wok or frying pan and stir fry ginger and garlic for about 30 seconds until fragrant.
  2. Add courgettes and carrot and stir fry for about 2 minutes, then add stock or water to create steam, and continue stirring for another 1-2 minutes.
  3. Add straw mushrooms, tomato and spring onions with salt, pepper and sugar.
  4. Blend well and cook for a further 1-2 minutes.
  5. Sprinkle with fish sauce and serve at once.

Serves 4

Variation :

Other fresh delicate vegetables, such as asparagus, mange tout, green peppers or cucumber, can also be cooked in this way.
