Crispy Noodles with Sour Pickle Recipes

Ingredients :

100g vermicelli noodles (soaked in boiling water for 5 minutes and drained)

4 red chilies, 3 shallots (all thinly sliced)

1 stalk coriander leaves, 1 stalk mint leaves (all chopped)

20g belacan powder

oil for frying


Sour Pickle Ingredients:

1 lemon, 4 shallots (all sliced)

3/4 tbsp salt

100ml water

85g palm sugar

50ml white vinegar

3/4 tbsp fish sauce

Method :

Add chilies, shallots, coriander leaves, mint leaves and belacan powder to noodles. Heat oil in a skillet. Place 4-5 tbsp of noodle mixture in the skillet. Flatten them. Fry flattened noodle mixture until golden brown or crispy. Drain on absorbent paper.

To prepare pickle - Combine lemon, shallots, salt and water and cook for 10 minutes. Add sugar, vinegar and fish sauce. Mix well and let it thicken.

Serve with crispy noodles.
