Curried Prawns Recipes

shallots, or 1 small onion, chopped

mild curry powder

Vietnamese Hot Sauce

chicken stock or water

coconut milk

red potatoes, cut into chunks

carrots, sliced

lime or bay leaves

fish sauce

raw peeled prawns



coriander sprigs, to garnish

Method :
  1. Heat oil in a pan or pot and stir fry garlic and shallots or onion for about 30 seconds.
  2. Blend in curry powder and cook for 30 seconds.
  3. Blend in curry powder and cook for 30 seconds or until fragrant.
  4. Add Vietnamese Hot Sauce, stock or water and coconut milk then bring to the boil, stirring constantly.
  5. Add potatoes, carrots, lime or bay leaves and fish sauce, cover and simmer gently for 25-30 minutes.
  6. Add prawns, salt and sugar, then increase the heat and cook for 5-6 minutes, stirring continuously.
  7. Serve at once, garnished with coriander sprigs.
