Dried Rice Papers (Banh Trang) - These very
thin, dried pancakes, about 22cm / 9 inches in diameter, are essential
in preparing the famous Vietnamese spring rolls. There is no substitute,
thick Chinese spring roll wrappers will not do.
Since they are very delicate and brittle
they must be handled with care. Dried Rice Papers (Banh Trang) tend to
dry out and crack in contact with air, so it is important to keep them
covered with a barely damp towel while you are working. To use, they
must be dipped briefly in hot water, then they will become pliable
within seconds.
