Ingredients :

margarine

chicken fillet, minced

cauliflower (to dice)

long beans (to dice)

carrot (to dice)

corn kernel

tomato, sliced thinly

eggs

tomato sauce

salt and sugar to taste

Method :
  1. Heat 2 tablespoons margarine.
  2. Fry diced vegetables, corn kernels and sliced tomato.
  3. Add minced chicken and stir-fry.
  4. Stir in tomato sauce, then season with salt and sugar.
  5. Allow to cook for 5-8 minutes then remove from stove.
  6. To prepare omelets, heat remaining margarine in a flat pan.
  7. Beat eggs and fry.
  8. Make sure omelets is round and even all over.
  9. Lower the heat, then carefully pour cooked ingredients onto the omelets.
  10. Roll omelets and dish up.

Serves 3-4
