Fried Fish Fillet Recipes

Ingredients :

450 g



3 tablespoons

firm white fish fillet, such as halibut, cod, haddock or monkfish, cut into 2 cm pieces

egg, beaten

plain flour mixed with 2 tablespoons water

vegetable oil for deep frying

fresh Thai holy basil and coriander sprigs, to garnish

Spicy Fish Sauce, to serve

salt and freshly ground black pepper

Method :
  1. In a dish, season fish with salt and pepper and leave for 25-30 minutes.

  2. Make a batter by blending egg with flour and water paste.

  3. Heat oil in a wok or deep fat fryer to 180oC (350oF).

  4. Coat fish pieces with batter and deep fry, in batches, for 3-4 minutes until golden.

  5. Remove and drain on absorbent kitchen paper.

  6. Place fish pieces on a warmed serving dish with garnishes.

  7. Serve at once with Spicy fish Sauce as a dip.

Serves 4

Variation :

A whole fish, boned, skinned and coated in batter, can be deep fried first then cut into bite sized pieces for serving.
