Fried Fish Fillet Recipes
firm white fish fillet, such as halibut,
cod, haddock or monkfish, cut into 2 cm pieces
plain flour mixed with 2 tablespoons water
vegetable oil for deep frying
fresh Thai holy basil and coriander
sprigs, to garnish
Spicy Fish Sauce, to serve
salt and freshly ground black pepper
In a dish, season fish with salt
and pepper and leave for 25-30 minutes.
Make a batter by blending egg with
flour and water paste.
Heat oil in a wok or deep fat fryer
to 180oC (350oF).
Coat fish pieces with batter and
deep fry, in batches, for 3-4 minutes until golden.
Remove and drain on absorbent
Place fish pieces on a warmed
serving dish with garnishes.
Serve at once with Spicy fish Sauce
as a dip.
