Using a pestle and mortar, pound
garlic, lemon grass, shallots, chilies and coriander to a paste.
In a mixing bowl, thoroughly blend
pounded mixture with fish sauce to a smooth paste.
Add drumsticks and coat well with
paste, then cover the bowl and leave to marinate for 2-3 hours,
turning drumsticks every 30 minutes or so.
Prepare barbecue or preheat grill.
Cook drumsticks over the barbecue
or under the grill for 10-15 minutes, turning frequently and basting
with marinade remaining in the bowl for the first 5 minutes only.
Serve hot on a bed of lettuce
leaves with Spicy Fish Sauce as a dip.
