Grilled Quail Recipes

Ingredients :


1 teaspoon

1 tablespoon

1 teaspoon

1 tablespoon

1 tablespoon

1-2 tablespoon

cleaned quail, each split down backbone and pressed flat

salt and freshly ground black pepper

minced garlic

finely chopped lemon grass


fish sauce

lime juice or vinegar

vegetable oil

lettuce leaves

coriander sprigs, to garnish

Spicy Fish Sauce, to serve

salt and freshly ground black pepper

Method :
  1. Rub 4 quail all over with plenty of salt and pepper.

  2. In a mixing bowl, blend garlic, lemon grass, sugar, fish sauce and lime juice or vinegar.

  3. Add quail, turning to coat in mixture, then leave to marinate for 2-3 hours, turning over now and then.

  4. Prepare a barbecue or preheat grill.

  5. Brush quail with oil and cook over barbecue or under grill for 6-8 minutes on each side, basting with remaining marinade during first 5 minutes of cooking.

  6. Serve quail on a bed of lettuce leaves, garnished with coriander sprigs, with Spicy Fish Sauce as a dip.
