Lychee with Palm Sugar Medley Recipes

Ingredients :

10-12 lychees (without juice)

3 pineapple rings (with syrup)

50g sweet corn (creamed)

50g kidney beans (boiled until tender)

400ml coconut milk

100g palm sugar

2 tbsp water

grated coconut (for decoration)

Method :

Melt palm sugar in water. Strain and set aside. Combine lychees, pineapple, sweet corn, beans, coconut milk and melted palm sugar. Boil for 3-5 minutes. Remove from heat and sprinkle medley with grated coconut before serving.

Serves 4
