fish sauce
whole dried shrimp, chopped
cloves garlic, chopped
dried red chilies with seeds, chopped
lime juice
fresh red or green chili, seeded and
chopped
pea aubergines, chopped (optional) |
Method :

Using a pestle and mortar or small
blender, pound or mix fish sauce, shrimp, garlic and dried chilies
and lime juice to a paste.

Stir in fresh red or green chili
and pea aubergines, if using.

Transfer paste to a small bowl.

Serve with a selection of raw
vegetables.

Store in a covered jar in the
refrigerator for several weeks.
Serves 6-8.
