shallots, finely chopped
chopped fresh root ginger
bean sprouts
small red pepper, cored and thinly sliced
spring onions, shredded
soy sauce
coriander sprigs, to garnish

Method :

In a bowl, season pork with salt
and pepper and leave for 10-15 minutes.

Heat oil in a wok or frying pan and
stir fry shallots and ginger for about 1 minute.

Add pork and stir fry for 2-3
minutes, until shreds are separated and pork turns almost white in
color.

Add beans sprouts, red pepper,
spring onions and soy sauce and stir fry for a further 2-3 minutes.

Garnish with coriander sprigs and
serve at once.
