Prawns With Lemon Grass Recipes

Ingredients :


1 tablespoon

1 teaspoon

350-400 g




1 tablespoon

2-3 tablespoons

cloves garlic, chopped

chopped coriander

chopped lemon grass

black or white peppercorns

vegetable oil

raw peeled prawns, cut in half lengthways if large

shallots or 1 small onion, sliced

small fresh chilies, seeded and chopped

tomatoes, cut into wedges

fish sauce

oyster sauce

chicken stock or water

coriander springs, to garnish

Method :
  1. Using a pestle and mortar, pound garlic, coriander, lemon grass and peppercorns to a paste.
  2. Heat oil in a wok, or frying pan and stir fry spicy paste for 15-20 seconds until fragrant.
  3. Add prawns, shallots or onion, chilies and tomatoes and stir fry for 2-3 minutes.
  4. Add fish sauce, oyster sauce and stock or water, bring to the boil and simmer for 2-3 minutes.
  5. Serve garnished with coriander sprigs.
