Mix quail meat with
salt, pepper, sugar and fish sauce. Have the ingredients marinate for
25 minutes. Pour the oil to a wok. Stir fry meat, garlic and ginger
for 2 minutes. Cook together with spring onion,
mushrooms, water chestnuts and preserved vegetables. Mix well, cook with oyster sauce. Put 2 tbsp of mixture in a lettuce
leaf. Roll up the lettuce leaf with
fresh mint and coriander. Roll the lettuce leaf tightly and
pack. Ready to serve. You may serve with spicy fish
sauce to spice this dish.
