Heat oil in a clay or flameproof
casserole and stir fry garlic, onion, and lemon grass for about 1
minute. Add beef and stir fry for 2-3
minutes, or until color of meat changes. Add stock or water, bring to the
boil, then add soy or fish sauce, chili sauce, five spice powder and
sugar. Blend well, then reduce heat, cover
and simmer gently for 45-50 minutes. Add spring onions, seasons with
pepper and cook for a further 5 minutes. Garnish with coriander sprigs and
serve straight from the pot.
Substitute curry powder for five spice
powder to make beef curry.
