Spicy Crab Recipes

Ingredients :

450 ml

clove garlic, chopped

shallots or white parts 3-4 spring onions, chopped

chopped fresh root ginger

chopped lemon grass

vegetable oil

chili sauce


coconut milk

chicken stock

fish sauce

lime juice or vinegar

meat from 1 large or 2 medium cooked crabs, cut into small pieces

salt and freshly ground black pepper

coriander sprigs, to garnish

Method :
  1. Using a pestle and mortar, pound garlic, shallots or spring onions, ginger, and lemon grass to a fine paste.
  2. Heat oil in clay pot or flameproof casserole, add garlic mixture, chili sauce and sugar and stir fry for about 1 minute.
  3. Add coconut milk, stock, fish sauce and lime juice or vinegar and bring to the boil.
  4. Add crab pieces and season with salt and pepper.
  5. Blend well and cook fro 3-4 minutes, stirring constantly, then serve hot, garnished with coriander sprigs.

Serves 4

Uncooked crabs can be used for this dish, but increase cooking time by about 8-10 minutes.
