Spicy Pork Hot Pot Recipes

Ingredients :

cloves garlic, chopped

shallots, chopped

lean pork, cut into bite sized pieces

sugar

fish sauce

five spice powder

stock or water

spring onions, cut into short sections, to garnish

mange tout and peppers, to serve (optional)

salt and freshly ground black pepper

Method :
  1. Heat oil in a clay pot or flameproof casserole and stir fry garlic and shallots for about 1 minute until fragrant.

  2. Add pork pieces and stir fry them for about 2 minutes, or until pork turns almost white in color.

  3. Add sugar, fish sauce and five spice powder, stir for 1 minute, then add stock or water.

  4. Bring to the boil, reduce heat, cover and simmer for 15-20 minutes.

  5. Adjust seasoning, garnish with spring onions and serve with mange tout and peppers, if wished.

Serves 4

Variation :

Chicken, lamb, veal or beef can all be cooked in the same way; increase the cooking time by 10-15 minutes for lamb and veal, 20-25 minutes for beef.
