Stir Fried Pork Recipes

Ingredients :

minced garlic

shallots, finely chopped

chopped fresh root ginger


fish sauce

pork fillet, cut into small slices or cubes

vegetable oil

sliced bamboo shoots, drained

small red chilies, seeded and chopped

spring onions, chopped

oyster sauce

stock or water

corn flour

sesame oil

coriander sprigs and cucumber slices, to serve

salt and freshly ground pepper

Method :
  1. In a bowl, mix garlic, shallots, ginger, sugar, fish sauce and salt and pepper.

  2. Add pork and leave to marinate for 25-30 minutes.

  3. Heat oil in a wok or frying pan and stir fry pork pieces for 2 minutes, then add bamboo shoots, chilies, spring onions and oyster sauce and stir fry for 4-5 minutes.

  4. Rinse out marinade bowl with stock or water and add to pork mixture.

  5. Bring to the boil.

  6. Mix corn flour with 1 tablespoon water and stir into sauce.

  7. Cook, stirring, until thickened.

  8. Add sesame oil, garnish with coriander sprigs and serve with halved cucumber slices.
