Vietnamese Hot Sauce Recipes

Ingredients :

clove garlic, chopped

small red or green chilies, seeded and chopped

finely chopped fresh root ginger

chili sauce

stalks lemon grass, peeled and chopped

vegetable oil

soy sauce

fish sauce

sugar

lime sauce with pulp

chicken stock or water

chopped coriander leaves

corn flour

Method :
  1. Using a pestle and mortar, pound garlic, chilies, ginger, chili sauce and lemon grass to a paste.

  2. Heat oil in a medium saucepan and gently stir fry paste with soy sauce, fish sauce, sugar, lime juice and stock or water, then bring to the boil.

  3. Blend in chopped coriander.

  4. Mix corn flour with 2 tablespoons water and stir paste into sauce to thicken it.

  5. Remove from heat and serve.

Make about 350 ml

This highly spiced sauce goes well with all sorts of meat or fish dishes - it can form the base for curry sauce, or it can be served as a dip.
