Italian Sausages with Tagliatelle Recipes

Ingredients :

2 red capsicums

2 tsp olive oil

500g (1lb) Italian sausages

500g (1lb) tagliatelle

1 large onion, sliced

3 cloves garlic, crushed

2 red chilies, chopped

500g (1lb) tomatoes, roughly chopped

1/4 cup (60ml / 2 fl oz) red wine

1 tbsp balsamic vinegar

1 tbsp chopped fresh oregano

2 tbsp chopped fresh parsley

Method :

Cut the capsicums into large pieces. Place under a hot grill until the skin blackens and blisters. Cool in a plastic bag, then peel away the skin and cut into thin strips. Heat the oil in a large frying pan and brown the sausages. Remove and cut into pieces. Cook the pasta in boiling salted water for 10 minutes, or until al dente. Rinse under hot water, and keep warm.

Reheat the frying pan over low heat. Cook the onion, garlic and chili for 10 minutes, stirring occasionally. Add the capsicums and cook for 3 minutes. Add the tomato, wine and vinegar. Cover and simmer for 5 minutes. Mix in the sausage, herbs, salt and pepper. Serve with the pasta.
