Spiced Red Cabbage Recipes

Ingredients :

750g (1.5lb) red cabbage

1 large red onion, chopped

1 green apple, cored and chopped

2 cloves garlic, crushed

1/4 tsp ground cloves

1/4 tsp ground nutmeg

1.5 tsp ground brown sugar

2 tbsp red wine vinegar

20g (3/4 oz) butter, cubed

Method :

Preheat the oven to slow 150C (300F / Gas 2). Quarter the cabbage and remove the core. Finely slice the cabbage and put it in a large casserole dish with the onion and apple. Toss well. Combine the garlic, spices, sugar and vinegar in a small bowl. Pour the mixture over the cabbage, and toss to combine. Dot the top with the butter. Cover and bake for 90 minutes, stirring once or twice. Season to taste with salt and freshly ground black pepper, and serve hot.

Serves 4-6
