Winter Fish and Bean Bake Recipes

Ingredients :

1 tbsp olive oil

1 onion, chopped

1 clove garlic, crushed

50g (1.75 oz) thinly sliced pancetta, chopped

2 zucchini, sliced

1 tbsp tomato paste

425g (14 oz) can crushed tomatoes

1 tbsp chopped fresh marjoram

1 tbsp chopped fresh oregano

310g (10 oz) can canellini beans, drained

4 boneless thick white fish fillets

Method :

Preheat the oven to moderate 180C (350F / Gas 4). Heat the oil in a large pan and add the onion, garlic and pancetta. Cook until the onion is soft, but not brown. Add the zucchini, tomato paste, tomatoes and herbs. Bring to the boil, reduce the heat and simmer, covered, for 10 minutes. Add the canellini beans. Season with salt and pepper. Place the fish in a single layer in a shallow ovenproof dish. Spoon the sauce over the top. Cover with foil and bake for 25 minutes, or until the fish is cooked. Serve immediately.
