Hot and Sour Turkey Soup Recipes

lean minced turkey

dried Chinese mushrooms, soaked in hot water for 20 minutes

preserved vegetables, shredded

Chinese Chicken Soup

brown sugar

red rice vinegar

dark soy sauce

corn flour mixed with 4 teaspoons cold water

spring onions, finely chopped

chopped coriander leaves

large pinch ground white pepper

Method :
  1. Cook turkey in a saucepan of boiling water for 3 minutes.

  2. Drain and set aside.

  3. Drain mushrooms and squeeze out excess water.

  4. Discard stems and slice caps.

  5. Place minced turkey, mushrooms, preserved vegetables, stock, brown sugar, red rice vinegar, pepper and soy sauce in a saucepan.

  6. Stir to combine.

  7. Bring to the boil and simmer for 3 minutes.

  8. Add corn flour mixture and cook, stirring, until thickened.

  9. Add chopped spring onions and coriander and serve.
