Chicken with Strawberry and Peppercorn Sauce Recipes

Ingredients :

2 tsp oil

4 chicken fillets

1 quantity Strawberry and Peppercorn Sauce

4 whole strawberries - garnish

Method :

Brush the frying pan with oil and heat over medium heat. Sauté the chicken fillets until cooked and golden brown. (You can microwave them on 'high' for 3 minutes but they will not brown). Prepare sauce. Slice whole strawberries leaving them joined at base. Fan out from top of strawberry (optional). Slice fillets through and fan across each dinner plate. Pour sauce over and garnish with fanned strawberries.

Some unusual combinations don't quite make the mark, but this one is delicious and worthy of a special occasion. You don't have to go to the trouble of fanning the fillets or strawberries in the way we suggest, although this gives a professional touch; you can simply spoon the sauce over the cooked fillets and garnish them with halved strawberries.
