Ingredients :

1/4 medium cabbage, finely shredded

1 small onion, grated

1 small green capsicum (bell pepper), chopped

1 stick celery, chopped

1/3 cup grated carrot

ground black pepper

1/2 quantity Creamy Yoghurt Dressing

Method :

Toss all ingredients in a large bowl, chill until ready to serve. Once you have added the dressing, coleslaw should not be stored. However, you can prepare the vegetables in advance and store them in the refrigerator. Add the dressing just before serving.

To vary - add 1/3 cup chopped pineapple and 2 tablespoons of sultanas. Substitute commercial low oil coleslaw dressing for Cream Yoghurt Dressing.

To store - cover and refrigerate for no more than a day.

Serves 4 - 6
