Coconut Cod Crisp Recipes

Ingredients :

675 g cod fillet, skinned, cut into 2" (5 cm) cubes

50 g butter or margarine

2 tsp salad oil

75 g fresh white breadcrumbs

25 g desiccated coconut

1 garlic clove, peeled and crushed

2 tsp lemon peel

1 tsp salt

5 tbsp pineapple juice

4 wedges of orange of garnish (peel left on)

Method :
  1. Wash cold and pat dry.
  2. Heat butter or margarine and oil in a pan until sizzling.
  3. Add crumbs, coconut and garlic.
  4. Fry over medium heat until ingredients turn a warm gold.
  5. Stir in lemon peel.
  6. Put fish into a shallow, greased heatproof dish to form a single layer.
  7. Season with salt then moisten with pineapple juice.
  8. Sprinkle with fried crumb mixture.
  9. Cook, uncovered, for 15 - 20 minutes in hot oven, 425F (220C), Gas 7.
  10. Garnish with orange wedges.

Serves 4 - 6
