Spanish Mackerels, cleaned of intestines
red chilies, sliced thinly
green chilies, sliced thinly
salt to taste
thumb size piece shrimp paste, toasted and
- Grill the fish over a charcoal
fire until cooked on both sides.
- Prepare the sauce.
- Mix together all the ingredients
and season to taste with salt.
- Serve the fish hot with the sauce
either with rice or by itself.
Serves 4 - 6
The traditional way to grill fish is by using a pair of bamboo holders. The fish is put in between the bamboo and grilled over a charcoal fire.
