Steamed Fish and Vegetables Recipes

Ingredients :

whole red mullet, red snapper or sea bream, each weighing about 225 g, cleaned

Masala salt


chopped coriander leaves

chopped fish parsley

piece fresh root ginger, grated

lemon slices

vegetable oil

new potatoes, sliced

carrots, sliced

courgettes, sliced

salt and pepper

coriander leaves, to garnish

Method :

Wash fish and pat dry with absorbent kitchen paper, then slash 3 times on each side. Mix masala salt, turmeric, coriander, parsley and ginger together and rub into flesh and skin of fish. Tuck a slice of lemon inside each fish and set aside. Heat oil in a frying pan, add potatoes and carrots and fry, stirring frequently, for 5-6 minutes, until slightly softened and beginning to brown. Add courgettes to pan and fry for 1 minute more. Season with salt and pepper. Using a slotted spoon, transfer vegetables to a steamer. Lay fish on top, cover and steam for 20-25 minutes or until fish flakes easily and vegetable are tender. Serve at once, garnished with coriander.
