Spicy Chicken in Bamboo Recipes
600g chicken (cut into bite sizes)
1 stalk lemon grass
1 tsp curry powder
1/2 tsp fennel powder
35ml coconut milk
salt to taste
30-50ml cooking oil
banana leaves for wrapping
1 bamboo for cooking
2 shallots, 3 cloves garlic, 4 cm ginger
(all minced together)
Heat oil and saute minced ingredients.
Add curry powder and fennel and stir. Add coconut milk and salt to
taste. Add chicken and stir till half-cooked. Wrap with banana
leaves and pack into bamboo. Grill until chicken is golden brown in
color. Split the bamboo and serve.
