Speedy Burritos Recipes

Ingredients :

1 tablespoon


1 teaspoon



olive oil

16-ounce can black beans or pinto beans


ripe avocado

8-inch flour tortillas




Method :

  1. In a large skillet, heat the olive oil over medium-low heat.

  2. Drain the beans, dump into the skillet, and stir, mashing half the beans with the back of a spoon.

  3. Stir in the cumin and continue to heat gently.

  4. Peel and dice the avocado.

  5. Grate some cheese.

  6. Thinly slice some lettuce.

  7. Wrap the flour tortillas in a clean kitchen towel or in plastic wrap.

  8. Lay the wrapped tortillas on a plate and heat them in the microwave on high for 45 seconds.

  9. Spoon a quarter of the beans down the middle of a heated tortilla.

  10. Sprinkle cheese over the hot beans, add some shredded lettuce and diced avocado, and spoon on salsa to taste.

  11. Roll up the burritos and eat them right away.
