Broad Beans With Cream and Bacon Recipes

Ingredients :

1 kg

250 ml

1 tsp


125 ml


broad beans

chicken stock

caster sugar

egg yolk


bacon rasher, cooked and crumbled

a bouquet garni

salt and pepper

Method :
  1. Cook the beans in the stock with sugar and herbs until the beans are just tender.
  2. Remove the bouquet garni and discard.
  3. Beat the egg yolk with the cream and stir carefully into the beans.
  4. Heat gently and season with salt and pepper.
  5. Transfer to a warm serving dish and sprinkle with crispy bacon.

Serves 4-6
