Savoury White Sauce Recipes

Ingredients :

500ml skimmed milk

1 onion, cut in half

1 small carrot, roughly chopped

1 stick of celery, roughly chopped

6 peppercorns

2 tbsp plain flour

Method :
  1. Pour the milk into a saucepan.
  2. Add the chopped vegetables and peppercorns.
  3. Bring mixture to the boil.
  4. Immediately reduce heat and simmer for 15 minutes.
  5. Strain the milk into a bowl.
  6. Discard the vegetables and peppercorns.
  7. In a separate bowl, mix the flour with 2-3 tbsp of the warm milk.
  8. Stir to form a smooth paste.
  9. Gradually add the rest of the milk, stirring continuously.
  10. Return the sauce to the saucepan.
  11. Bring to the boil, stirring constantly.
  12. Reduce heat and simmer gently for 5 minutes.

Serves 4 - 6
