Fried Oyster Omelette Recipes

Ingredients :

5 tablespoons

4 tablespoons

300 ml



2 teaspoons

1 teaspoon



vegetable fat

corn flour



fresh oysters

fish sauce

chili paste or 1 red chili, sliced

spray fresh coriander leaves, shredded

stalks onions, chopped

Method :
  1. In a flat frying pan, heat 2 tablespoons vegetable fat to a fairly high temperature.

  2. Mix the flour and water to a thin liquid and pour into the pan.

  3. Allow to brown lightly.

  4. Crack the eggs into the batter and spread them round, whipping them lightly.

  5. Turn up the heat and fry till brown on one side.

  6. Flip over and cook till brown on the other side.

  7. Gradually add the rest of the vegetables fat as the omelette is frying.

  8. When the omelette is golden, shred it into large pieces and add the oysters.

  9. Add the sauce and chili and stir well.

  10. Serve garnished with coriander leaves and spring onions on its own as a snack or as an accompaniment to boiled rice.
