Thai Green Curry Paste Recipes

Ingredients :

14 small fresh green chilies

4 garlic cloves, halved

2 lemon grass stalks, finely chopped

2 lime leaves, torn

2 shallots, chopped

50g coriander leaves, stalks and roots

2.5cm root ginger, peeled and chopped

2 tsp peppercorns

1 tsp lime rind

1/4 tsp salt

1.5 tbsp groundnut oil

Method :

Mix all ingredients to a food processor, blend till thick paste. Mix the paste with the oil. Store in airtight container.

Makes 1 jar
