Cheese Schnitzels Recipes

Ingredients :

8 slices of packeted processed cheese

plain flour

3 Grade 3 eggs

1/2 tsp salt

1/2 tsp celery salt

1 tsp powder mustard

1/2 tsp Worcester sauce

75 g lightly toasted white breadcrumbs

25 g ground almonds

mix breadcrumbs and ground almonds together on piece of greaseproof paper

about 4" (10 cm) oil for frying (use a deep frying pan)

lemon wedges and parsley for garnishing

Method :
  1. Separate cheese slices and coat first in flour then in eggs, beaten thoroughly with salt, celery salt, mustard and Worcester sauce.
  2. Ensure both sides of each cheese slice are well covered then dip into the crumb and almond mixture.
  3. Leave to stand 1/4 hour.
  4. Re-coat with egg and crumb mixture.
  5. Stand 1/2 hour in the refrigerator to give coating a chance to 'set'.
  6. Do not pile cheese slices on top of the other but spread out on to a large plate.
  7. Heat oil until a cube of bread sinks to the bottom of the pan, browns in 1/2 a minute and rises to the top.
  8. Remove and discard.
  9. Add cheese 'Schnitzels'. 2 at a time, and fry for 3/4 minute only.
  10. Remove from pan, drain on crumpled kitchen paper and serve hot, garnished with lemon and parsley.
