peeled, stoned and sliced

Method :
-
Brush the chicken joints on all sides
with soy sauce and season with pepper.
-
Grill under medium heat for 10 minutes
on each side.
-
Place each chicken piece in the centre
of a 10 inch (25 cm) square of foil.

Surround with banana and mango sliced
and place a pineapple slice on top.
-
Sprinkle with the cinnamon, butter and
lemon juice.
-
Close the foil tightly to make
leak proof parcels.
-
Grill for a further 30 minutes,
turning the parcels over once.
-
Serve with rice.
Serves 4
Note : You can chop the remaining
pineapple into the rice, or toss it with a green salad accompaniment.
