Method :
Brush the chicken joints on all sides
with soy sauce and season with pepper. Grill under medium heat for 10 minutes
on each side. Place each chicken piece in the centre
of a 10 inch (25 cm) square of foil. Surround with banana and mango sliced
and place a pineapple slice on top. Sprinkle with the cinnamon, butter and
lemon juice. Close the foil tightly to make
leak proof parcels. Grill for a further 30 minutes,
turning the parcels over once. Serve with rice.
Serves 4
You can chop the remaining pineapple into
the rice, or toss it with a green salad accompaniment.
