Chicken Soaked in Premium Light Soy Sauce Recipes

Ingredients :

1 chicken

1 piece galangal

4 cloves shallot

3 cloves star aniseed

113g brown sugar

2 cups premium

light soy sauce

4 tbsp Chinese rose wine

1/2 tbsp salt

Method :
  1. Wash chicken and drain off the water.
  2. Wash galangal and slice.
  3. Tear the outer skin off shallot and pound lightly.
  4. Bring premium light soy sauce and 6 cups of water to the boil.
  5. Put in galangal, shallots, star aniseeds, brown sugar and salt.
  6. Cook for 15 minutes.
  7. Place in chicken and bring to the boil for a while.
  8. Reduce to low heat and soak for 5 minutes.
  9. Turn off the stove and cover for 15 minutes.
  10. Add rose wine and bring to the boil again.
  11. Turn off the stove and cover for 10 minutes.
  12. Remove the chicken and leave to cool.
  13. Chop up and transfer to a plate.
  14. Pour the liquid from cooking chicken.
  15. Serve.

Do not soak and cook chicken over high heat so that the chicken will be very smooth and tasty.
