Dim Sum Recipes

Ingredients :

For the Dough

150g plain flour

50ml boiling water

25ml cold water

7.5ml vegetable oil

For the Filling

75g minced pork

45ml chopped canned bamboo shoots

7.5ml light soy sauce

5ml dry sherry

5ml demerara sugar

2.5ml sesame oil

5ml cornflour

lettuce leaves such as iceberg, frisée or Webbs

Method :
  1. For the dough, sift the flour into a bowl.
  2. Stir in the boiling water, then the cold water together with the oil.
  3. Mix to form a dough and knead until smooth.
  4. Divide the mixture into sixteen equal pieces and shape into circles.
  5. For the filling, mix together the pork, bamboo shoots, soy sauce, sherry, sugar and oil.
  6. Stir in the cornflour.
  7. Place a little of the filling in the center of each dim sum circle.
  8. Pinch the edges of the dough together to form little "purses".
  9. Line a steamer with a damp dish towel.
  10. Place the dim sum in the steamer and stem for 5-10 minutes.
  11. Serve on a bed of lettuce with soy sauce, spring onion curls, sliced red chili and shrimp crackers.

Variation - Substitute the pork with cooked peeled shrimps. Sprinkle 15ml or 1 tbsp of sesame seeds onto the dim sum before cooking.

Popular as a Chinese snack, these tiny dumplings are fast becoming fashionable in many specialist restaurants.
