Dried Scallop On Turnip Recipes

Ingredients :

900g turnip

12 medium sized dried scallops

2 cups stock

10g black moss

1 slice ginger

1 tsp wine

Seasoning

1 tsp rose wine

1/2 tsp ginger juice

1/2 tbsp cooked oil

Simmering

1 can stock

1/2 tbsp oil

1 slice ginger

Sauce

3/4 cup steaming water of dried scallops

1 tsp oyster sauce

1 tsp caltrop starch

1/2 tsp granulated sugar

dash of sesame oil

Method :

  1. Wash dried scallops. Soak in 1 cup of stock for 2 hours. Steam for 1/2 hour. Remove and tear away hard parts. Pour in seasoning (set aside steaming water of dried scallops).

  2. Peel and wash turnip. Cut into thick pieces. Cut into rings with mould. Stuff in dried scallops. Arrange on a plate. Steam for 1 hour.

  3. Soak black moss in water until it becomes tender. Add 1 tbsp of oil. Mix well and wash. Simmer with simmering ingredients until it becomes tender. Put in the center of the plate.

  4. Heat some oil. Sauté ginger slices. Sizzle wine. Pour in sauce and bring to the boil. Pour the sauce over dried scallops and black moss.

Serves 2 - 4
