Dried Scallops On Chicken Recipes

Ingredients :

1 gutted chicken - 1.2 kg

4 dried scallops

2 slices ginger

2 sprigs spring onion

2 tsp wine

75g Chinese flowering cabbages

Marinade

1 tsp salt

2 tsp ginger juice

Sauce

1 tsp light soy sauce

1 tbsp oyster sauce

1/2 tsp granulated sugar

1/3 cup steaming sauce of dried scallops

1 tbsp water chestnut powder

dash of sesame oil

Method :

  1. Wash chicken and wipe dry. Rub marinade inside the chicken. Then hang up for a while. Put 1 slice of ginger and 2 sprigs of spring onion into the chicken. Put the chicken on a plate. Steam for 30 minutes until the chicken is cooked. Bone the chicken and cut into pieces. Arrange on a plate. Poach Chinese flowering cabbages in water with oil and salt. Arrange on a plate.

  2. Soak dried scallops. Remove hard parts. Steam for 2 hours. Tear into shreds.

  3. Heat some oil. Sauté ginger slice. Sizzle wine. Pour in sauce and bring to the boil. Then add dried scallop shreds and stir well. Pour the ingredients over chicken.
