Fish Maws Soup with Lotus Seeds and Lily Bulbs Recipes

Ingredients :

113g dried fish maws

600g shin of pork

75g lotus seeds

75g lily bulbs

450g carrot

2 candied dates

1 quarter dried tangerine peel

Method :
  1. Boil the dried fish maws in water.
  2. Switch off the heat and let them soak for 3 hours.
  3. Wash and cut into pieces.
  4. Soak tangerine peel in water until soft.
  5. Scrape off the pith.
  6. Wash lotus seeds, lily bulbs and candied dates.
  7. Wash shin of pork.
  8. Cut into large pieces.
  9. Scald.
  10. Skin, wash and slice carrot.
  11. Bring 12 cups of water to the boil.
  12. Add all ingredients and bring to the boil again.
  13. Cook over high heat for 10 minutes.
  14. Turn to medium low heat and cook for 2 hours.
  15. Turn to high heat again at last and cook for another 10 minutes.
  16. Season with salt.
  17. Serve.

In case you use fish maws with thinner walls, just scald and rinse them before cooking.
