Mutton with Lotus Root and Red Bean Recipes

Ingredients :

450g lean mutton

600g lotus root

75g red beans

8 water chestnuts

1/3 dried tangerine peel

2 slices ginger

Marinade

2 tsp ginger juice

1 tbsp white wine

2 tsp light soy sauce

Method :
  1. Wash mutton. Cut into pieces. Cook in boiling water for 3 minutes. Remove and rinse with water. Drain. Add marinade and marinate for 30 minutes.

  2. Wash lotus root. Cut both ends and peel. Wash red beans and soak in water for 1 hour. Wash and peel water chestnuts. Soak dried tangerine peel and remove pith.

  3. Bring 10 cups of water with dried tangerine peel to the boil. Add mutton (pour away marinade), ginger slices and ingredients of (2). Cook for 10 minutes. Turn to low to medium heat and cook for 2 hours. Season with pinch of salt. Remove lotus root and cut into pieces. Dish up mutton and lotus root. Serve with light soy sauce.
