Pork Backbone Soup with Lotus Root and Pueraria Root Recipes
Ingredients :
600g pork
backbone
600g
pueraria root
160g lotus
root
38g black
eyed beans
38g
hyacinth beans
38g small
red beans
2 candied
dates
1 quarter
tangerine peel
Method :
Soak tangerine peel until soft.
Scrape off the pith.
Wash black-eyed beans, hyacinth
beans and small red beans.
Wash, scald and rinse the pork
backbone.
Cut the lotus root into 2 sections
and discard the fibrous roots.
Wash. Peel pueraria root.
Wash and cut into pieces.
Put lotus root and pueraria root
into a pot.
Add 15 cups of water and bring to
the boil.
Add the remaining ingredients and
cook for 15 minutes.
Turn to low heat and cook for 2
hours.
Then, turn to high heat again and
cook for 10 minutes.
Take out the lotus root and slice
it.
Put it back into the pot and bring
to the boil.
Season with salt.
Serve.
This soup helps promote urination and
expel accumulated Heat. Those taking a vegetarian diet might use 75g
yellow beans and 2 candied dates in place of the pork backbone for
similar effects.
