Shark Fins with Shrimps and Bean Sprouts Recipes

Ingredients :

300g fresh shrimps

4 eggs

75g green beans sprouts

19g yellow Chinese chives

1 tsp wine

2 slices ginger (shredded)

Chinese parsley

Seasoning for eggs

1/4 tsp salt

1/6 tsp granulated sugar

2 tsp oil

Seasoning for shrimps

1/4 tsp salt

dash of sesame oil

pinch of pepper

Method :

  1. Scald shrimps with shells in boiling water. Then remove heads and shells. Add seasoning and set aside.

  2. Wash green beans sprouts. Drain. Cut yellow Chinese chives into 1" sections.

  3. Add seasoning into eggs. Whisk slightly.

  4. Heat 1 tbsp of oil. Sauté ginger shreds. Then add green beans sprouts and stir fry for a while. Sizzle wine and stir well. Dish up with strainer. Drain.

  5. Clean the wok. Then heat the wok and add 3 tbsp of oil. Pour in egg mixture and stir fry until the mixture is half done. Add shrimps, green beans sprouts and yellow Chinese chives. Stir fry for a while. Dish up and decorate with Chinese parsley.

Serves 2 - 4
